What is "Dutch-process cocoa" and how does Potassium Carbonate create it?
Dutch-process (or "Dutched") cocoa powder is treated with an alkalising agent, traditionally Potassium Carbonate, to neutralise the natural acidity of cocoa. This process results in a darker colour, milder, less bitter flavour, and improved solubility compared to natural (non-alkalised) cocoa powder, and is widely used in certain baked goods, chocolate products, and beverages.
Is Potassium Carbonate corrosive or hazardous to handle?
Potassium Carbonate is a strongly alkaline material (pH 11-12 in solution) and can cause skin and eye irritation on contact, particularly in concentrated form or solution. Standard industrial handling precautions including appropriate PPE (gloves, eye protection) and good ventilation should be followed.
