What is Potato Starch?

Potato Starch is a fine, pure white powder extracted from potato tubers (Solanum tuberosum) through a wet milling process. It has the largest granule size of all common commercial starches (15–100 microns) and produces one of the highest viscosities when gelatinised. It is naturally gluten-free and has a very low protein and fat content, making it an exceptionally clean and neutral-tasting starch.
