What is Wheat Starch?

Wheat Starch is a fine white powder extracted from wheat grain (Triticum aestivum) by separating the starch from gluten and other components through a wet milling process. It has a bimodal granule size distribution — large A-granules (15–35 microns) and small B-granules (2–10 microns) — giving it versatile functional properties across food and industrial applications.

Does Wheat Starch contain gluten?
Standard Wheat Starch contains trace amounts of gluten and is not suitable for people with celiac disease or severe gluten intolerance. However, specially processed wheat starch with gluten reduced below 20 ppm can be certified as gluten-free for use in certain regulated markets.
